Baked Breaded Shiitake
THIS RECIPE IS A GREAT ONE TO START with, BUT I BELIEVE THAT THERE IS A ROOM FOR IMPROVEMENT. HOWEVER, THESE BAKED BREADED SHIITAKES ARE VERY RICH IN FLAVOUR, CRISPY, AND JUST PERFECT TO ENRICH ANY DISH. They are also a great snack.
Ingredients
For 2-3 people:
shiitake (250 g)
hazelnut flour - as fine as it can get (120 g)
oat milk (50 ml)
salt
Method
Remove shiitakes’ stalks and rinse them with water. Next, place them on a baking tray with parchment paper, sprinkle over some salt and bake at 180°C for about 7 minutes - so that they lose a part of the excess water. After that, remove them from the tray and move them onto a plate.
In one bowl, prepare milk of your choice, and on another plate, sprinkle some hazelnut flour (approx. 30 g at a time).
Dip each mushroom in the milk (remove excess liquid), then thoroughly coat with hazelnut flour. Pay attention that you don’t get the flour too wet too quickly; otherwise, the flour won’t stick to the mushrooms anymore.
Place on the baking tray again and bake at 190-200°C for about 15 minutes until they develop a pleasant smell and a golden crisp.
I served them with “asparagus risotto” and red bell pepper sauce (mixed: 1 cooked red bell pepper + water + 1tsp nutritional yeast).
