Buckwheat Popcorn & Vegetable Risotto

-This crispy popcorn is so easy to make, yet a great addition to many dishes-

-Used grandma’s vegetable & mushroom soup as a SAUCE-

ingredients

For the risotto:

  • barley

  • carrots

  • zucchini

  • kale

  • spices of your choice

Buckwheat popcorn:

  • buckwheat groats

Vegetable / mushroom sauce:

  • do it your way

Ajdove kokice:

  • ajdova kaša

Zelenjavna / gobova omaka:

  • narediš jo lahko po svoje


Method

vegetable risotto

Cook the barley in lightly salted water until it absorbs the water and becomes softer.

In the meantime, cut zucchini, carrots and kale and cook for a few minutes.

When ready, add cooked barley and mix everything together.

The following is magic!

Put buckwheat groats on a pan and fry at high temperature. You will see how the groats “explode” - quietly and on a smaller scale than normal popcorn. Make sure that they do not burn. After about 6 minutes - they should be ready.

Sprinkle it over the risotto, add the sauce and enjoy the dish - full of different textures and pleasant flavours. ;)
