Heavenly Carrot Puree With Leek & Millet

ingredients
For 3 people:
Millet
leek (2 small)
courgette (1 small)
millet (1/3 cup)
coconut milk (130 ml)
sesame seeds
hemp seeds
garlic powder
curry
turmeric
salt
carrot puree
carrot (300 g)
water (0,7 dl)
lemon (1/2)
salt

bučka (1 majhna)
prosena kaša (1/3 skodelice)
kokosovo mleko (130 ml)
sezamova semena
konopljina semena
česen v prahu
curry
kurkuma
sol
korenčkova omaka
korenje (300 g)
voda (0,7 dl)
limona (1/2)
sol
Method
leek & Millet
Wash leeks and zucchini. Cut them into smaller pieces. Saute on some coconut oil with the spices until they become softer. Meanwhile, cook millet by following the instructions on the packaging. When the vegetables are almost cooked-combine with the millet and pour over the coconut milk. Add some salt if needed and cook on medium heat for a few more minutes.
CARROT puree
For this delicious pure weight 300 g of carrots - peel them and cut into very thin slices. Put them in a saucepan and add some water (0,7 dl). I advise you to be precise to get the best final result. ;) Cook with some salt and covered with a lid for 20 minutes - firstly to boiling temperature and then on medium heat.
After the carrots are cooked-drain (if needed) and put them in a food processor. Squeeze a third or a half of a lemon and mix without any extra water until the mixture is very smooth.
Serve and enjoy this simple yet delicious dish.
