millet porridge
fresh spinach
nuts of your choice
pumpkin seed oil

METHOD
egg plants
Peel the eggplant, wash it and cut into small, square shaped pieces. Put them in a saucepan and sauté with a little olive oil, until they are ready. Don’t forget to add salt.
millet porridge
Wash the spinach. Blend it together with the nuts to get a uniform paste. Meanwhile, cook the millet porridge in a salty water, drain it and mix it with the spinach & nuts paste.
green sauce
Chop the carrots, kale and courgettes into smaller pieces. Wash them and gradually put them in a saucepan - firstly carrots, then kale and courgettes at the end. Sauté until they become softer and richer in taste. When ready - put all vegetables in a blender, add few leaves of parsley and blend to get a smooth sauce.
tomatoes
If you have your homemade tomato sauce then that’s the way to go! However, I bought the canned one, added fresh basil and oregano and cooked for about ten minutes on low heat.
