Quinoa Bowl

For 2-3 people:
aubergine (1)
zucchini (1)
roasted peanuts (1 handful)
quinoa (1/3 cup)
canned coconut milk (120 ml)

garlic powder

Method
Sauce
Wash and cut zucchini and aubergine (also peel it). Sauté until the vegetables become soft, and they start to smell nice. Add roasted peanuts, a pinch of salt, garlic powder, and the rest of spices. When almost cooked - pour over the coconut milk and cook for a few more minutes.

Meanwhile, cook quinoa by following the packaging instructions, drain, and add it to the sauce. When the flavours are combined - serve with some fresh greens - young spinach, for example.
