Mediterranean Quinoa

-simple, yet delicious summer dish-

ingredients

  • carrots

  • zucchini

  • tomato

  • tomato sauce

  • fresh basil

Method

Cut the vegetables into smaller pieces and cook them in an oiled pan over medium heat until soft. After a few minutes cooking-time add tomato sauce and fresh herbs.

In the meantime, cook the quinoa according to the instructions on the packaging.

*you can pour over some pumpkin seed oil ;)
