Mild Wild Garlic Soup
One of the most spontaneous recipes I’ve made so far. And it’s a good one. ;)
Ingredients
wild garlic (30 g)
sweet potato (1 large)
onion (1/2)
water (approx. 450 ml)
salt
*optional: 2 tbsp coconut milk, spices of your choice (I added turmeric)
Method
Pick wild garlic. If you don’t know how exactly it looks like - don’t pick it. However, you can easily recognize it by its smell (like garlic).
Saute the onion until it becomes glassy. Add water if it starts to stick to the pot.
Meanwhile, peel the sweet potato and cut it into smaller pieces and then add it to the onion. Mix and stew for about 7 minutes or until it become softer. Add water and cook on medium heat for about 7 more minutes. Then add salt, coconut milk (if you wish), stir, and mix everything with a stick to get a smooth, creamy soup. Mmmm, delicious!
You can serve the soup with homemade buckwheat dumplings to which you add some finely chopped wild garlic. Buckwheat popcorn might go well with this soup as well.
