Pasulj
I wishED for something richer and “heavier” for a change. Pasulj - a dish made out of beans and flavourful spices was everything I needed.
Ingredients
For approx. 5 servings:
beans - I used common bean (500 g)
paprika spice (1 tsp)
salt
fresh thyme (¼ tsp)
water
pepper
onion (1,5 large)
*optional (“side dish”): red bell peppers (3 for 3 servings)

fižol - uporabila sem češnjevca (500 g)
začimba paprika (1 žlička)
sol (po okusu)
svež timijan (¼ žličke)
voda
poper
čebula (1,5 velikih)
*po želji (“priloga”): rdeče paprike (3 za 3 serviranja)
Method
Pasulj
Soak beans overnight. Strain, wash and put them in a pressure cooker, covered with a salted water 3 cm above. Once the water inside boils, reduce the heat and cook at medium heat for about 20+ minutes. When they are ready - remove them from the cooker. Meanwhile, finely chop the onions and saute on some oil, spice with paprika. Make sure the onions caramelize and get a glassy look. Add the beans, salt, stir well and pour in some water - just so much that it almost cover the beans. Better less than too much... After a few minutes mix into some thyme and pepper. and let it cook on medium heat for approx. 40 minutes – pasulj is ready when it becomes totaly soft, the whole mixture creamy, flavourful and the whole water disappears. During the cooking time regularly check on taste and add the spices you think that it lacks.
Red bell peppers
Wash them and then cut each into 6 pieces. Spread over the baking tray, add a pinch or two of salt and bake at 190°C for about 25 minutes.
