Red Bell Pepper Sauce With Red Lentils
The first recipe where I tried to substitute ingredients with diary and gluten in the original recipe with their better alternatives.

peanuts (35 g)
coconut milk (150 ml)

Method
red lentils
A few hours before the meal preparation, soak red lentils in water. Right before you start cooking - drain the soaked lentil and wash it. Cook it in salted water until it becomes soft - a few minutes. Drain again put it back in the pot, and mix in tahini and some spices of your choice.

Mix peanuts in a food processor and sauté them with coconut oil until they become a little browner and start to smell nice. Wash the peeled red bell pepper and cut it into smaller pieces (see the photo below). Cook on higher heat with constant stirring for a few minutes (until they become softer and sweeter).
Add some salt and pour over the coconut milk. Cover with lid and cook on a low heat for a few more minutes. The final result should be a creamy, orange sauce with quite a strong flavour from peanuts.
Serve in a deep plate, together with the red lentils.
