Strawberry & Elderflower Jam
no ADDED sugar · divine taste · with chia seeds
INGREDIENTS
For a 200 g jar:
fresh strawberries (cca. 175 g)
elderflower (1,5)
chia seeds (3 tbsp)
lemon juice (¼ of lemon)
*optionally: vanilla (extract / …)
METHOD
Wash the strawberries (after removing green parts) and elderberry flowers. Try to remove some harder parts from the flower.
Put the berries and flowers into a blender, squeeze in ¼ of the lemon and add some vanilla (optionally).
Blend until you get a smooth and fragrant mixture.
*You can leave some strawberries in pieces to get a different texture.
Add three tablespoons of chia seeds and stir for at least one minute. Leave the bowl in the refrigerator for about 20 minutes. Stir thoroughly and place in the refrigerator for about an hour. The seeds should expand and become very gelatinous in texture.
When ready - fill your jar with delicious jam!
I put it on my buckwheat bread, and I love the combination of this jam and homemade almond butter!
