Sweet Potatoes With Green Veggies
Crunchy, sweet, full of goodness.
Ingredients
For 2 people:
sweet potato (1 medium)
green bell pepper (1)
zucchini (1 medium)
leek (1 small)
pumpkin seed spread (1 tsp)
salt
curry
turmeric
*peanuts, sesame seeds

Method
Preheat the oven at 190°C.
Cut the sweet potato into very thin slices. Spread them over the baking tray and sprinkle over the spices of your choice—Bake for about 20-30 minutes. One half through, stir them and bake until they become crunchy.
For the veggies, cut the green bell pepper, zucchini, and leek in small pieces. Put some oil on the frying pan and add leek. Saute until glassy. Add bell pepper and zucchini. Cover with lid and let the mix cook on medium heat for few minutes or until the vegetables become soft. If the whole water evaporates, add some more; mix in a teaspoon of pumpkin seed spread. Add salt, spices of your choice, and optionally some peanuts.
Serve with sesame seeds.
