100% Buckwheat Bread
Gluten-free, dairy-free, can be made vegan, also without yeast or baking powder.
INGREDIENTS
for a small loaf:
walnuts (60 g)
buckwheat flour (250 g)
chia seeds (1 tbsp) + water (0,5 dl) / 1 egg
water (2 dl)
plant oil (2 tbsp)
salt (1 tsp)

orehi (60 g)
ajdova moka (250 g)
chia smena (1 žlica) + voda (0,5 dl) / 1 jajce
voda (2 dl)
rastlinsko olje (2 čajni žlici)
sol (1 čajna žlica)

For the vegan version substitute egg with 0,5 dl water + 1 tbsp of chia seeds.
Leave the seeds for around 5 minutes - until they get soaked.
Sift the flour.
Add soaked chia seeds / egg.
Cut walnuts into smaller pieces.
Add salt.
Add a part of the water and oil (2 tbsp). I’m using extra virgin olive oil.
Mix the ingredients using a spoon, gradually add the rest of the water. Add walnuts at the very end.
Put dough in a loaf tin (mine is 22 x 12 cm) with a baking paper (don’t make my mistake).
Bake for about 42(+) minutes at 190°C.
