Vegetable Curry
-if you like vegetables - you should definitely give it a try!-

ingredients
For 4-5 people:
cooked chickpeas (400 g)
cauliflower (½)
carrots (3 big)
kohlrabi (small)
canned tomatoes (250 g)
cashews
onion (½)
garlic (2 heads)
curry
pepper
turmeric
cumin
*rice, fresh asparagus

kuhana čičerika (250 g)
cvetača (½)
korenje (3 velika)
koleraba (majhna)
kuhan paradižnik (v pločevinki /…)
indijski oreščki
čebula (½)
česen (2 glavici)
curry
poper
kurkuma
kumina
*riž, sveži šparglji
method
Chop the cauliflower, carrots and kohlrabi into smaller pieces, put them on a baking tray, pour over some olive oil and add a pinch or two of salt and pepper. Preheat the oven at 190°C an roast for around 30-40 minutes. Stir the vegetables every 10 minutes.
Sauté onion, add cooked chickpeas and stir over a medium heat. Press the garlic into the saucepan, stir and add some cashews. Add the spices and stir well.
When the vegetables are roasted - mix them with the other ingredients in the saucepan. Add tomato sauce and cook for about 15 minutes on a medium heat.
For the side dish I’ve prepared some rice and roasted asparagus.
The possibilities are limitless - you can play with different side dishes, substitute any other veggie (of your choice) for asparagus…
