Autumn Bowl With Hokkaido Pumpkin
Not only you can see autumn - with this recipe you can also taste it! Mmmm, delicious ;)
ingredients
For 2 people:
hokkaido pumpkin (a small part)
zucchini (1 small)
(multicolor) quinoa (1/4 cup)
coconut milk (100 ml)
sesame seeds
peanuts (optional)
lime
fresh ginger (2 cm3)
curry (1/2 tsp)
garlic powder
salt

hokaido buča (majhen kos)
bučka (majhna)
(pisana) kvinoja (1/4 skodelice)
kokosovo mleko (100 ml)
sezamova semena
arašidi (po želji)
limeta
svež ingver (2 cm3)
curry (1/2 žlička)
česen v prahu

Method
Cook quinoa according to the instructions on the packaging.
Meanwhile, peel the pumpkin and cut into smaller pieces. Put some coconut oil on the frying pan, press the ginger, add garlic powder, curry, and spices of your choice. Put over the pumpkin pieces, cover with a lid, and cook for about 3 minutes, then add the cut zucchini.
Cook on medium heat for about 8 more minutes. Add salt.
Then pour over some coconut milk and check if the flavour matches your taste.

Before serving, mix in some sesame seeds and peanuts.
Serve in a bowl - first quinoa, then the hokkaido sauce—squeeze over a third of lime.
