Millet x Poppy Seeds x Apple Layered Goodness

A fun experiment that turned into a delicious layered cake + it’s gluten-free & plant-based!

I’d say it is a perfect dessert for fall days.


Ingredients

For 28 x 22cm baking tray:

Layer with millet and poppy seeds

  • poppy seeds (110 g) - best are ground ones, but you can grind them yourself in a blender or food processor (you get a much more intense aroma, and the dessert becomes more smooth and holds together better)

  • millet (250 g)

  • large apple

  • plant-based milk (100 ml)

  • water (250 ml)

  • dates (8-15, depending on how sweet you like your desserts - I had 8)

  • cinnamon (approx. 4 dashes - 1/3 tsp)

  • a pinch of salt

  • vanilla extract (1/2 tsp) - optional

Layer of apples

  • coconut oil (1/2 tbsp)

  • apples (approx. 900g)

CHOCOLATE DRESSING

  • coconut oil (60 g)

  • cacao powder (1 tbsp)

  • sugar/sweetener of your choice (f.i. 1 tbsp maple syrup or 1,5 tbsp coconut sugar)


Method

Layer with millet and poppy seeds

Wash the apple, remove unedible parts, cut it into smaller pieces, and put it in a blender with seedless dates and water. Blend until smooth.

If you are sensitive to the slight bitterness of millet, you can try to decrease it using the following method (or any other you can find on the internet):

Wash the millet with cold running water, then pour it into a heat-resistant cup. Pour hot water over it and leave for 15-20 minutes. Then stir the millet so the cloudy water is drained, and wash it with cold water.

Then you can continue with the primary method…

Put the millet in a pot together with the blended apple sauce, milk, cinnamon, salt, and vanilla. Bring to a boil and cook for about 15-25 minutes on medium heat - until you get a JUICY porridge (don’t wait until it’s dry!). Then remove it from heat, add poppy seeds to the mixture, stir quickly and let it cool down.

While you wait for the millet to cook, cut apples into slices (see the image below). Heat an oiled (coconut oil gives a nice flavour to apples) frying pan, and on a higher heat, fry the apples so that they caramelize. Place the caramelized apples into a baking tray, forming a smooth base layer of the dessert.

Over them, spread the millet mixture, flatten the surface and let it cool down.

CHOCOLATE DRESSING

Once the layers are cooled (after a few hours), prepare the chocolate dressing. Melt coconut oil over steam, add cacao, and gradually mix in sweetener/sugar (Try it to see if it maybe needs more sweetness). Pour it evenly over the dessert.
