Craving french fries, but you want something healthier and more delicious? Then I would highly recommend you to try out this recipe that is great for warmer and also colder days.
Ingredients
For 2-3 people:
sweet potato (3 medium)
carrot (2 medium)
zucchini (1 medium)
leek (1 larger)
eggplant (small)
cayenne pepper
water
salt
curry
turmeric
paprika
Method
sweet potatoES
Peel the potatoes, wash and cut into pieces twice the size of french fries (see photo below). Place on a baking tray, season with turmeric, paprika and a little curry and salt. Mix well to distribute the spices evenly. Bake at 180stC for about 30 minutes or until the sweet potatoes are soft, with a little crunch.

After you have washed and peeled the vegetables (except sweet potatoes), cut them into small cubes. You can cut leek into half circles. Put all the diced vegetables in a pot and saute them over high heat (7/9), stirring regularly.
Once the vegetables start sticking to the bottom of the pot, add a little water, cover with a lid and continue stirring. Add salt and spices of your choice; I opted for curry, paprika and turmeric. Cook over medium heat for about 15 minutes total.
When all the water evaporates - add more. When the vegetables are soft and the flavours are as desired (spices...), it's ready!
