Colourful Patties With Sweet Red Cabbage
Mmm, colours on plate and in my stomach
INGREDIENTS
Red cabbage
red cabbage (1 head)
apples (2 small)
coconut sugar (approx. 5 tbsp)
lemon juice (from 1 lemon)
salt
Vegetable patties (approx. 16 pcs)
zucchini (2 small)
carrot (1 medium)
flaxseeds (6 tbsp) + water (2 tbsp )
oats (approx. 1 handful)
peanuts / hazelnuts (approx. 2 handfuls)
sesame seeds (2-3 tbsp)
cooked chickpeas (240 g)
salt

Method
Red cabbage
Cut the head of cabbage in very thin slices (like noodles) and rinse with water. Put a small amount of oil into a large heated pot, add sugar, and cook on medium heat until the state of caramelized liquid is reached. Then cover everything with red cabbage, add a few pinches of salt, and peeled & grated apples—squeeze over one lemon. Mix well and cook covered on medium heat for about 1,5+ h. Stir regularly during that time, add water if needed, and check for taste (add lemon juice/salt).
Vegetable patties
Preheat the oven at 200°C. Grate zucchinis and carrot, add chickpeas with flax seeds (6 tbsp water, 2 tbsp flax seeds, mix and leave for 5 min). Mix well, combine with salt, nuts, oats, sesame seeds. Put the mixture in the fridge for 15 minutes, then shape into patties and put them on a baking tray covered with parchment paper. Bake for 25-30 min until they become golden brown. At that point, they should lose the stickiness and come off the paper effortlessly.
