Milkless Ricotta
Looks like ricotta, tastes much better! You can spread it over your favourite bread or incorporate into other dishes.
Ingredients
For the amount shown on the photo (for two zucchini lasagnas):
organic cashew nuts (100 g)
lemon juice (1/4 large lemon)
water (approx. 50 ml)
salt (approx. 1/4 tsp ), pepper
garlic (1 small clove)
*optional: nutritional yeast

organski indijski oreščki (100 g)
sok limone (1/4 velike limone)
voda (cca. 50 ml)
sol (cca. 1/4 žličke ), poper
garlic (1 majhen strok)
*po želji: jedilni kvas
Method
Soak cashew nuts (covered with water) overnight. Combine all ingredients and blend in a food processor to get a uniform mixture. Enjoy straight away or store sealed in a refrigerator for a maximum of one week.
