Simple Soft Cookies
One evening I decided to bake cookies that are made quickly and with ingredients that most of us have at home. And here they are - SOFT cookies that probably won’t last until the next day.
INGREDIENTS
For approximately 18 cookies:
(ground) nuts - choose your favourite combination of walnuts, hazelnuts, and almonds (100 g)
oats or oat flour (100 g)
oat milk (25 ml)
small banana
apple
apple cider vinegar (1/2 tbsp)
a dash of cinnamon
bicarbonate of soda (1/2 tsp)
lemon juice (1 tbsp)
optional: vanilla extract
Method
Grind the nuts until they start to stick together. Grind the oats as well. Put both ingredients in a bigger bowl, add bicarbonate of soda and mix well. In a food processor, combine the banana with oat milk to get a liquid mixture. Add to the bowl. Peel the apple and grate it into the bowl. Sprinkle over a dash or two of cinnamon and if you like, add a little bit of vanilla extract for an even better flavour. Mix. Pour in apple cider vinegar together with a spoon of lemon juice and mix well.
Preheat the oven to 175°C.
Prepare a baking tray and put it over parchment paper. Take a part of the mixture with a spoon and create cookies - about 5 cm in diameter and 0,8 mm in height. When you use the whole mixture - bake the cookies at 175°C for 13-16 minutes. I bake them for 15 minutes.
Once they are baked, leave them for half an hour to cool down a little bit, then carefully remove them from the parchment paper and…leave them for the next day. Just kidding - enjoy them straight away!
