Sweet Soup

  • korenje (2)

  • zelena (1 stebelce)

  • jabolko (1 majhno)

  • koleraba (1/2)

  • bučka (1 velika / 2 majhni)

  • zelje (nekaj listov)

  • peteršilj

ingredients

  • carrots (2)

  • celery (1 stem)

  • apple (1 small)

  • kohlrabi (1/2)

  • zucchini (1 large / 2 small)

  • cabbage (a few leaves)

  • parsley

Method

Wash the ingredients and cut them into smaller pieces. Spread evenly on the baking tray. Add a pinch of salt and some pepper. Bake in the oven at 190°C for about 30 minutes.

Put the roasted vegetables in a saucepan and add water - the amount depends on how thick the soup should be. Add at least enough water to cover the vegetables. Add the spices of your choice and let the sweet soup boil over medium heat for about 10 minutes.

Mix the ingredients with a hand blender or other type of blender. If the consistency is too thick, add some water, let it boil for a few minutes and then mix again.

I like to give my soup a little texture with buckwheat dumplings.

You can sprinkle over some crispy buckwheat popcorn. Find your own favourite combination. ;)
